Galbi tang [sop iga Korea]. Galbi-tang (갈비탕, --湯) or short rib soup is a variety of guk, or Korean soup, made primarily from beef short ribs along with stewing beef, radish, onions, and other ingredients. The short ribs, or "galbi" also refers to grilled short ribs in Korean barbecue while the suffix tang is another name for guk. Beef short ribs, daikon radish, eggs, garlic, green onion, ground black pepper, korean radish, onion, starch noodles.
Typically, the ribs are boiled along with Korean radish (mu, 무), onion, garlic, and ginger until fork tender. Galbi means rib and tang means soup- so it means rib soup?! lol In Korea, beef is used be very expensive (I believe it still is) and this Galbitang is very very special meal back then. My mom used to make with other cut of beef as well, since Galbi is one of the most expensive cut, so we all could have. Bahan-bahan Galbi tang [sop iga Korea]
- Sediakan 1 kg iga sapi.
- Dibutuhkan 200 gr lobak (1 buah, dibagi 2, 1 bagian kaldu, 1 bagian isi).
- Dibutuhkan 50 gr bawang putih (8 siung).
- Siapkan 100 gr bawang bombay (1 siung besar).
- Sediakan 30 gr jahe (seruas).
- Sediakan 40 gr daun bawang (bagian putih kaldu, hijau taburan).
- Sediakan 4 lembar daun salam.
- Gunakan 2 buah kurma merah/biasa.
- Diperlukan 1 sdm kecap asin.
- Dibutuhkan 1 sdm arak masak (pengganti 1/2 sdm cuka masak, 1/2 sdm gula).
- Sediakan 1 sdm garam (bisa ditambah/dikurangi).
- Siapkan 1 sdm merica (sesuai selera).
- Diperlukan pelengkap tambahan:.
- Dibutuhkan 1 keping bihun.
- Gunakan 2 butir telur (pisahkan putih dan kuningnya).

Cara memasak Galbi tang [sop iga Korea]
- Siapkan bahan2, cincang bawang putih, potong daun bawang (bagian hijau, sisihkan) lobak bagi menjadi 2.
- Rendam iga selama 2 jam, setiap 30 menit buang airnya, ganti dg air baru, perhatikan air rendaman awal msh berwarna merah dan rendaman akhir sudah mulai bening, krn darah dr iga sdh mulai bersih.
- Didihkan air lalu masukkan iga sapi bersama 4 lembar daun salam, saat mendidih kembali, buang airnya (daun salam jgn dibuang) cuci bersih iga, ganti dengan air baru utk merebus.
- Rebus kembali bersama potongan lobak, bawang bombay, bawang putih dan daun bawang (bagian putihnya) bisa dg dipresto selama 30 menit atau rebus biasa hingga empuk, stl empuk angkat bahan2 pembuat kaldu, kalau perlu disaring.
- Beri bumbu dan 1/2 bagian lobak yg tersisa.. koreksi rasa.
- Siapkan bahan pendamping, rendam bihun, dadar telur lalu iris2.
- Susun dalam mangkok, bihun, siram dg sop iga lalu hias dg telur dadar dan daun bawang (bagian hijau).
